Zucchini Nachos – Healthy Keto Taste Bombs

Zucchini Nachos:  Zucchini is commonly used in most healthy recipes because it has really low carb and you can not over eat it. This recipe is really easy to do. You just chop the ingredients and use them to your liking. You can even go wild and use any toppings you want. Taste of the zucchini after you grill it becomes very generic and this allows us to boost its taste with anything we want. In this specific recipe we will be using black beans , avocado , cherry tomatoes and cheddar cheese as toppings. But I will have more suggestions for you after the recipe instructions.

Ingredients

  • 2 medium zucchinis
  • 1 cup grated cheese (cheddar, mozzarella etc.)
  • 1/2 cup cooked black beans
  • 8 cherry tomatoes, cut into quarters
  • your choice of cold toppings, e.g. avocado, fresh cilantro, sour cream, et

Instructions

1- First of all cut the zucchinis into slices. If you cut them with an angle you can put more topping on after they are cooked. Cook them on a griddle for 3 minutes untill they get the black grill mark :). You can use any frying pan if you do not have a griddle.

2-Take the zucchini slices and put them in a classic baking tray with baking paper on top or you can put them in a glass baking tray. I prefer glass because it is a healthier option.But in this recipe we will be using baking paper.

3-Now you can decorate your zucchini nachos with the toppings we mentioned earlier. Lay black beans, tomatoes, melting cheese of your choice (cheddar, mozarella etc.) on top of the mini zucchinis.

4-)Finally place the tray under a medium broiler and watch the cheese melt. After the cheese has melted, take them out and serve them with the cold ingredients of your choice like avocado, cilantro, sour cream, corn kernels etc.

Final Result

The final result is a healthy and keto friendly meal. It also appeals to the eye.And the best part is you do not have to watch out for how much you eat. This is a really low carb recipe and you can basically eat as much as you want. Feeling full after you eat a healthy meal is just  one of those moment where you feel great and not feel guilty. 🙂 Have fun.
